Morning glory muffins


1 ½ whole wheat flour
½ oats
2 tsp baking soda
2 tsp cinnamon
½ tsp ground ginger
½ tsp salt
3 tbsp flax seed (optional)
3 large egg
¾ cup brown sugar
½ cup coconut oil, melted (any vegetable oil)
cup mashed banana (1 banana)
2 cups grated carrots
1 cup grated apples
1 cup crushed can pineapple
½ cup raisins or cranberries
½ cup semi sweet chocolate chips
½ cup chopped walnuts or pecans
¼ cup fresh, frozen or dry shredded coconut


Mix flour, baking soda, cinnamon, oats and salt, ginger powder flax seed in a medium bowl. Whisk eggs, sugar, coconut oil, banana, apple, carrots, and pineapple in a larger bowl. Add the flour mix to the wet mix and fold until no dry streaks are left. Mix in the raisins, chocolate chips, nuts, and or coconut. Spoon the batter into liners, filling them all the way to top. Bake in a 350 c preheated oven for 20-24 minutes or until toothpick inserted comes out clean

The whole wheat can be substituted with all purpose flour and to make it school safe we can avoid the addition of nuts
